Beta-carotene is a carotenoid. Carotenoids are divided into two main groups: carotenes and xanthophylls. Carotenes are made of hydrogen and carbon, while xanthophylls also contain oxygen atoms. Beta-carotene belongs to the group of yellow and red vegetable dyes. It is this nutrient that gives the vibrant color to carrots and other vegetables. Beta-carotene is fat-soluble, meaning it is absorbed best with fat. This occurs in the upper part of the small intestine. Beta-carotene is a so-called provitamin because it can be converted to vitamin A if the body needs it. Beta-carotene is also produced in synthetic form for use as a food coloring.
